If you liked the summer salad from my last post, this is also a perfect salad for you! This protein-packed kale salad is perfect for any occasion—post-workout, lunch, brunch; you name it!

Let’s get started!
You will need:
• 4 cups of kale
•1/2 red onion
• 2 cups of chopped carrots
• 1/4 cup rice vinegar
• 1/4 cup olive oil
• 1 tbsp of sesame oil
• 1 lime
• Garlic powder and pepper to taste
Let’s get into it!
First, you will want to start off my rinsing your kale lightly, just to be completely safe. After doing so, add your kale leaves to your bowl. Depending on how big or small you want your kale leaves to be, you can just throw in the leaves into the bowl, or chop them into smaller pieces.

Then, you will cut your red onion into small dices and your carrots into dime-sized pieces, and add them to the bowl.


Next, you will begin to make your dressing. This dressing calls for 1/4 cup of olive oil, 1/4 cup of rice vinegar, 1 tbsp of sesame oil, and 1 lime squeezed. Add these into a cup and whisk. Then, add garlic powder and pepper to taste. Your dressing is now done!

Your last step is simply to drizzle the dressing over your bowl and toss. Enjoy!
