Veggie Soup with Potatoes

If you like vegetable soups, but want something that is more carb-filled, this one’s for you! This recipe also does not require any broth—you are making it on your own!

You will need:

• 1/2 can of hominy

• 2 cups of chopped carrots

• 2 cups of chopped potatoes

• 2 tomatoes

• 1/3 red onion

• 2 cups of chopped mushrooms

• 1/4 head of cabbage

• Olive oil, Italian seasoning, salt, pepper and garlic powder to taste

First, you will want to start by filling a pot of water and placing it on your stove. It should take around 15 minutes for the water to begin boiling. In the meantime, you should start chopping your vegetables. Start by dicing your tomatoes. Place the tomatoes into the pot of water. This will begin to create your broth.

Then, you will need to start chopping your carrots into small dime-shaped pieces, and add the chopped carrots to a plate. Do the same with your 2 cups of mushrooms.

Additionally, you will want to dice 1/3 of a red onion, and cut your 1/4 head of cabbage into small pieces.

Once your pot begins to boil, add your plate of vegetables, as well as the 1/2 cup of hominy into the boiling pot. Stir for around 7 minutes.

Since you do not have anything that you need to cook too deeply for this recipe, your soup should be ready under 10 minutes after boiling. The last step is to add your spices/oils to taste. After that, you’re done. Enjoy!
