Minestrone Soup

This recipe is similar to the vegetable soup with potatoes published a few days ago on the blog. However, this soup substitutes the potatoes with rotini pasta. This is a perfect soup for digestion and detox, and can be eaten for lunch or dinner!

You will need:

• 2 cups of chopped carrots

• 1/2 box of rotini pasta

• 3 tomatoes

• 1/3 red onion

• 2 cups of chopped mushrooms

• 1/4 head of cabbage

• 3/4 can of kidney beans

• Olive oil, Italian seasoning, salt, pepper and garlic powder to taste

First, you will want to start by filling a pot of water and placing it on your stove. It should take around 15 minutes for the water to begin boiling. In the meantime, you should start chopping your vegetables. Start by dicing your tomatoes. Place the tomatoes into the pot of water. This will begin to create your broth.

Then, you will need to start chopping your carrots into small dime-shaped pieces, and add the chopped carrots to a plate. Do the same with your 2 cups of mushrooms.

Additionally, you will want to dice 1/3 of a red onion, and cut your 1/4 head of cabbage into small pieces.

Once your pot begins to boil, add your plate of vegetables, as well as your pasta and 1/2 can of beans to the pot. Stir for around 12 minutes.

After about 12 minutes, your soup should be done. Add your seasoning to taste and stir. Enjoy!
